A Good Addiction:)


For those of you who were able to go to the fabulous indexing activity you know exactly what I mean by the title of this post.  Adrienne did a wonderful job walking all of us through indexing (and we appreciated Diane's input to).  It was so helpful to have so many laptops available so we could actually get started ourselves.  I was so overwhelmed listening to all the information at first, but once I got started I was hooked.  It was so funny to listen as the room got quiet and all of us were focusing on our work:)  We even lost track of time and stayed later finishing up our "batch".  If you were unable to attend this activity ask around and see who went.  I'm sure any of us would love to help you get started in this important work.  And just so you know you might become a little addicted:)

90-Day Challenge

Look at this beautiful table.  I think it perfectly depicts what Kelly talked to us about.  90 days to accomplish the goals we set for ourselves is so doable!  When the four things she talked about (spiritual, fitness, nutrition, and financial) are in balance, we truly can feel peace:)  I loved the 90 day Book of Mormon hand-out she gave us.  I might just have to make that my first challenge!

Relief Society Birthday Dinner

 All I can say is "WOW"!  Brother and Sister Beachley were amazing.  What a wonderful night spent together learning about their mission.  I think we were all amazed by their stories.  It made me so excited to think of the day when my husband and I will be able to serve a mission together.
 The items they brought to display were to die for.  I just love the picture of Jesus holding that little boy in the upper right corner.  I loved hearing their testimonies of the importance of making a mission a priority in each of our lives.  There are so many opportunities we have locally and far away to serve our brothers and sisters throughout the world.  Hopefully, their message helped all of us to feel and understand the importance of missionary work.
  The food was delicious as usual!  We really do have some very talented women in our ward.  If anyone wants to send me the recipes, I'd be more than happy to post them:)
 
 Everyone enjoying the time spent together.
 
We ended the night with a beautiful musical number by these talented women.  I just wanted to thank everyone involved with this night.  The turn-out was great and it couldn't have gone any better.  
Can't wait until our next Relief Society activity:)

Almond Sheet Cake

Those on the Relief Society Board were able to enjoy this yummy dessert after our meeting last Sunday.  We thought we'd share the recipe with those who were not lucky enough to taste it in person.
1 cup butter
1 cup water
2 cups flour
2 cups sugar
1 teaspoon salt

1 teaspoon baking soda
1/2 cup sour cream
2 eggs
1 1/2 teaspoon almond extract
 
Bring butter and water to a boil. Mix flour and sugar in a large bowl. Pour the boiling liquid over the four and sugar and beat well. Add the remaining ingredients and beat well. Pour into a well-greased jelly roll pan (12x17). Bake at 375 for about 20 minutes. Cool for 20-30 minutes and spread with frosting.

Frosting
1/2 cup butter
1/4 cup milk
3 1/2 - 4 cups powdered sugar
1 teaspoon almond extract
dash of salt

Bring butter and milk to a boil. Pour over remaining ingredients, adding enough powdered sugar to achieve the consistency you want. Frosting should be thin enough to pour.

Notes: The original recipe called for 1 cup of butter in the frosting. It made it way too thin, and it all ran to the edges and pooled. 1/2 cup worked well.
Serve cake with raspberry sauce and whipped cream.

Raspberry Sauce
1 10-12 ounce bag frozen raspberries
1 cup water
1 1/2 tablespoons cornstarch

Mix cornstarch with a small amount of cold water and stir into the berries. Cook until slightly thickened.

French Toast Breakfast Bake

French Toast Breakfast Bake

8 oz french bread slices
4 eggs
2 cups milk
1/4 cup sugar
1 Tbsp vanilla
2/3 cup flour
1/3 cup brown sugar
1/2 tsp cinnamon
1/4 cup butter
1 cup blueberries
1 cup strawberries

Put bread in pan (Andrea thinks 11x7 pan works best, but if you would like to use a 9x13 just add more fruit and make 1 1/2 batches of the streusel mixture)

Mix eggs, milk, sugar, vanilla and pour over bread.

Refrigerate 8-24 hours

(Streusel Mixture) Use pastry cutter to cut butter into the flour, brown sugar, and cinnamon.

Put blueberries and strawberries over bread mixture and top with sugar mixture.

Bake at 350 degrees for 25-30minutes

ENJOY!!!  This recipe is delicious!
